Battered Cauliflower

    Prep cauliflower

    Wash and thoroughly dry the cauliflower. Cut into uniform medium‑bite florets (about 1 to 1 1/2 inch pieces). Pat dry again with paper towels — removing surface moisture helps the batter stick and crisp.

    Make batter

    In a large bowl combine 3 tbs all‑purpose flour, 2 tbs cornstarch, 1 tsp baking powder, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 1 tsp salt, and 1 tsp black pepper. Whisk together. If using the egg: whisk the egg with 3 tbs cold water, then whisk into the dry mix until smooth. If omitting egg, gradually add cold water (about 3 tbs) until you have a thick, coatable batter—similar to pancake batter that clings to a spoon.

    Heat oil

    Pour about 1 to 1 1/2 inches of neutral oil into a heavy skillet or Dutch oven (~2 cups). Heat over medium‑high until oil reaches 350°F (175°C) or a small drop of batter sizzles and browns in ~30–40 seconds.

    Batter and fry

    Working in batches (do not overcrowd), dip each cauliflower floret into the batter, allow excess to drip off, then carefully lower into hot oil. Fry 3–4 minutes per batch, turning occasionally, until batter is golden and crisp and cauliflower is tender when pierced with a fork. Use a slotted spoon to transfer to a wire rack set over a baking sheet or paper towels to drain. Keep finished batches in a warm oven (200°F / 95°C) while you fry remaining florets.

Buffalo‑Style Sauce

    Make sauce

    In a small saucepan or skillet over low heat melt 2 tbs unsalted butter. Add 3 tbs hot sauce, 1 tsp honey, 1 tsp apple cider vinegar, 1 tsp garlic powder and 1/4 tsp salt. Stir until combined and warm (do not boil). Taste and adjust sweetness or heat as needed.

    Toss cauliflower in sauce

    Place the drained fried cauliflower in a large bowl. Pour the warm sauce over the cauliflower and gently toss with tongs or two spoons until each piece is evenly coated. Work quickly so the batter remains crisp under the glaze but the sauce adheres.

    Transfer the sauced cauliflower boneless bites to a serving platter. Sprinkle with 2 tbs chopped fresh parsley or cilantro. Serve immediately with ranch or blue cheese dressing and lemon wedges on the side for squeezing.
