Method

Rim & Garnish

  1. 1

Combine the red hot rim spice and kosher salt on a small shallow plate. Mix to distribute evenly.

  2. 2

Rub the lime wedge around the outside rim of a 12–16 oz highball glass (or pint glass) to moisten it.

  3. 3

Dip the moistened rim into the spice-salt mixture, turning to coat thoroughly. Set the glass aside.

  4. 4

    Prepare garnish

Skewer the two pickled green beans on the cocktail pick and set aside to finish the drink.

Cocktail

  1. 5

Fill the rimmed glass about three-quarters full with cubed ice.

  2. 6

In a separate mixing glass or Boston shaker (no shaking required, just mix), add the Smirnoff Vodka, Clamato juice, Worcestershire sauce, garlic Tabasco, fresh lime juice, celery salt, and ground black pepper.

  3. 7

Stir the mixture briskly with a bar spoon for about 10–15 seconds to chill and combine the flavors. Taste and adjust heat or salt: add an extra dash of garlic Tabasco for more heat or up to 1/2 tsp extra Worcestershire for umami if desired.

  4. 8

Strain the mixed Caesar into the prepared rimmed glass over the ice.

  5. 9

Garnish by placing the pickled green beans skewered on the cocktail pick across the top of the glass and serve with a lime wedge on the rim or on the side.
