Seasonal Fruit Mix

Method

Prepare Fruit

  1. 1

    Wash and dry

Rinse all fruit under cold running water. Drain and pat dry with a clean kitchen towel or paper towels. Drying prevents dilution of the dressing and keeps the salad from becoming watery.

  2. 2

    Hull and slice strawberries

Trim the green tops from the strawberries. Slice larger berries into quarters or halves so pieces are bite-sized (about 1/2-inch pieces).

  3. 3

    Prepare berries and small fruit

Leave blueberries whole. If using raspberries or blackberries, check for stems and remove any damaged fruit.

  4. 4

    Peel and dice other fruit

Peel kiwi, then slice into rounds and quarter the rounds. Dice peach/nectarine and any optional stone fruit or melon into roughly 1/2-inch cubes so textures and bite sizes are consistent across the mix.

  5. 5

    Combine

Place all prepared fruit in a large mixing bowl. Gently toss with a large spoon to combine, taking care not to mash delicate berries.

Make Dressing & Finish

  1. 6

    Whisk dressing

In a small bowl or measuring cup, whisk together the lemon juice and honey (or maple syrup) until smooth. Taste and adjust sweetness if needed. The lemon brightens flavors and the sweetener balances acidity.

  2. 7

    Add mint and seasoning

Stir the finely chopped mint, a pinch of sea salt, and the freshly ground black pepper into the dressing. The tiny amount of salt enhances sweetness; the pepper adds a subtle savory note that elevates fruit.

  3. 8

    Dress the fruit

Pour the dressing over the bowl of fruit. Using a flexible spatula or large spoon, gently fold the dressing through the fruit until evenly coated. Avoid overmixing to keep berries intact.

  4. 9

    Chill briefly (optional)

For best flavor meld, cover and refrigerate the dressed fruit for 10–20 minutes. Do not chill longer than 1 hour if using very juicy fruit, or it may become watery.

  5. 10

    Plate and garnish

Transfer fruit to a serving bowl or divide among individual dishes. Garnish with microgreens or herb sprigs and a few extra mint leaves. Serve immediately.
