Remove country ham from refrigerator and let rest at room temperature for 10 minutes. This reduces chill and helps even cooking.

Heat a large skillet (preferably cast iron or heavy stainless) over medium heat until hot, about 2–3 minutes.

If using brown sugar, sprinkle it evenly into the melted butter and let it dissolve for 15–20 seconds, stirring once. This gives a light glaze to the ham.

Add the thinly sliced country ham in a single layer. If your skillet is smaller, cook in two batches to avoid crowding. Cook undisturbed for 1–1.5 minutes to develop a light sear.

Flip the slices and cook the second side for another 45–90 seconds, until edges are crisped but ham is not overcooked. Country ham is already cured/smoked and only needs reheating and crisping.

Season lightly with black pepper while still in the pan. Taste one piece; country ham is salty, so do not add extra salt.
