Prepare crab meat
Pick over the blue crab meat carefully, removing any shell fragments. Pat the crab meat dry on paper towels to remove excess moisture. If using both lump and picked meat, gently fold them together so pieces remain intact.

Mix dry ingredients
In a medium bowl, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp kosher salt, 1/2 tsp black pepper, and 1/4 tsp cayenne until evenly combined.

Make the batter
Pour the wet mixture into the dry ingredients and stir gently until just combined. The batter should be thick enough to coat crab pieces but still slightly loose — add a tablespoon more club soda if it feels too stiff. Do not overmix; a few small lumps are fine. Gently fold in the 10 oz blue crab meat (and optional 4 oz lump) in 2 additions to keep large lumps intact. Chill the batter in the refrigerator for 10–15 minutes to firm slightly while you heat the oil.

In a shallow bowl or plate, combine 1/2 cup all-purpose flour, 1/2 tsp kosher salt, and 1/4 tsp black pepper. This seasoned flour will help the batter adhere and create a crisp exterior. Keep near the fryer station.
Frying

Heat oil
Pour about 3 cups neutral oil into a heavy-bottomed pot or deep fryer. Heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter — it should sizzle and rise steadily without burning.

Dredge and portion
Using a small spoon or cookie scoop (about 1 tablespoon), lightly dredge crab pieces in the seasoned flour to remove excess moisture and help batter cling. Shake off excess flour, then dip or spoon a portion of the batter-coated crab into the hot oil. Drop gently into the oil, three to five pieces at a time depending on pot size to avoid overcrowding.

Fry to golden
Fry beignets for 2.5–3.5 minutes, turning once if needed, until they are puffed and deep golden brown. Maintain oil temperature around 330–350°F (165–175°C). If oil cools too much, they will absorb oil; if too hot, they brown too fast.

Drain and season
Use a slotted spoon to transfer beignets to a wire rack set over a rimmed baking sheet or to paper towels to drain briefly. While still warm, sprinkle lightly with coarse sea salt or flaky salt. Keep finished beignets in a warm oven (200°F / 95°C) on a rack to maintain crispness while you fry remaining batches.
Remoulade Sauce

While the batter chills or the oil heats, whisk together 1/2 cup mayonnaise, 1 tbsp Creole or Dijon mustard, 1 tsp prepared horseradish, 1 tbsp lemon juice, 1/2 tsp Worcestershire sauce, 1/2 tsp hot sauce, 1 tbsp chopped cornichons or dill pickles, 1 tsp chopped capers, 1 tbsp chopped parsley, 1/4 tsp paprika, 1/8 tsp kosher salt, and 1/8 tsp black pepper in a small bowl. Taste and adjust seasoning or acidity. Chill until ready to serve.
Plating & Serving

Arrange 3–4 warm crab beignets per serving on a platter or individual plates. Add a small ramekin of remoulade sauce alongside. Garnish with a sprinkle of chopped parsley and a lemon wedge. Serve immediately so the beignets remain crisp.
