Prepare the Shrimp
In a bowl, mix the flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, whisk the eggs until well beaten.
Coat the Shrimp
Dip each shrimp first into the egg mixture, then dredge in the flour mixture, ensuring an even coating.
Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the coated shrimp in batches, frying for about 2-3 minutes per side, or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
Serve
Serve the spicy fried shrimp hot with the sweet and sour aioli on the side for dipping. Garnish with sliced Thai chili peppers.
