In a large pot of salted boiling water, cook the tagliatelle pasta according to package instructions until al dente. Drain and set aside.

Prepare the Sausage and Vegetables

In a large skillet over medium heat, add olive oil. Once hot, add the diced andouille sausage and cook until browned. Add the diced onion and sliced bell pepper, cooking until softened (about 5-7 minutes).

Cook the Shrimp

Add minced garlic and Cajun seasoning to the skillet, stirring for about 1 minute until fragrant. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.

Pour in the heavy cream and bring to a gentle simmer. Stir in the grated parmesan cheese until melted and the sauce is creamy. Season with salt and black pepper to taste.

Add the cooked tagliatelle pasta to the skillet, tossing to coat in the Cajun cream sauce. Cook for an additional 2-3 minutes until everything is heated through.
