Warm the turkey and stuffing
If turkey and stuffing are cold, gently warm them to bring flavors together: microwave turkey slices in a single layer for 20–30 seconds on medium power or place turkey and stuffing in a heatproof dish and warm in a 325°F (165°C) oven for 7–10 minutes until just warmed through. Do not overcook to avoid drying the turkey.

If using leftover homemade stuffing, break it into manageable pieces so it layers evenly on the sandwich. Toss the stuffing lightly with 1/4 tsp smoked paprika and a grind of black pepper to enhance flavor.

Stir the mayonnaise with hot sauce (if using) and the remaining smoked paprika and set aside. This creates a slightly spicy mayo that complements the cranberry.

On the unbuttered side of one bread slice, spread the spicy mayo mixture (about 1 tbsp). On the unbuttered side of the other slice, spread the cranberry sauce (about 2 tbsp), spreading it to the edges for good coverage.

Layer the warmed turkey slices over the mayo-spread bread, arranging them to cover the bread. Season the turkey lightly with the remaining black pepper and a light dusting (about 1/4 tsp) of smoked paprika.

Top the turkey with the warmed stuffing, spreading it evenly (about 3 oz). If using pepper jack cheese, place the slice over the stuffing to melt slightly when grilling.

Place the cranberry-covered bread slice on top, buttered side facing up, to complete the sandwich assembly.

Flip the sandwich carefully and grill the second side for another 3–4 minutes until golden brown and the cheese (if used) is melted. Reduce heat if the bread is browning too quickly before the inside is warm.

Remove the sandwich to a cutting board and let it rest for 1 minute to allow the filling to settle. Sprinkle chopped fresh parsley over the stuffing if desired.

Slice the sandwich in half on a diagonal and serve immediately. Optional: serve with extra cranberry sauce or a small ramekin of gravy for dipping.
