Base & fortified wine

Method

Prepare basil and shaken mix

1

Muddle basil

Place 6 fresh basil leaves into a cocktail shaker. Add 0.25 oz simple syrup. Gently clap a couple of leaves between your palms to release aromatics and then lightly muddle the basil in the base of the shaker—enough to bruise and release oils but not shred into bits.

2

Add spirits and citrus

Add 2 oz lambrusco bianco, 0.75 oz white vermouth, 0.5 oz elderflower liqueur, and 0.5 oz fresh lime juice to the shaker with the muddled basil.

3

Dry shake

Dry-shake (no ice) the mixture for about 10 seconds to further integrate the basil and aromatics.

4

Shake with ice

Add a generous handful of ice to the shaker and shake vigorously for 10–12 seconds until well chilled.

Strain and finish

5

Double strain into glass

Double-strain the chilled mixture (use a Hawthorne and fine mesh strainer) into a chilled coupe or flute, leaving space for the prosecco.

6

Top with prosecco

Gently top the cocktail with 2 oz chilled prosecco. Pour slowly to preserve bubbles and to lift aromatics.

7

Garnish and serve

Express the oils of a lime twist over the surface and drop it in, or float a lime wheel on top. Slap a small basil sprig between your palms to release fragrance and use as garnish. Serve immediately.
