Steak & Marinade

    Prep and marinate steak

    Place thinly sliced steak in a shallow bowl. Add 1.5 tbs olive oil, Worcestershire sauce, soy sauce, minced garlic, 0.5 tsp kosher salt, and 0.5 tsp freshly ground black pepper. Toss to coat evenly and let sit at room temperature for 10–15 minutes (or refrigerate up to 2 hours). Thin slices will absorb flavor quickly and cook fast.

    Cook steak

    Heat a large cast-iron skillet or heavy griddle over medium-high heat until very hot (about 3–5 minutes). Add a light drizzle (about 1 tsp) of oil to the pan. Add the marinated steak in a single layer; let it sear undisturbed 45–60 seconds, then stir and break up into bite-sized pieces. Continue to cook 2–3 minutes until just browned but still tender. Remove steak to a plate and keep warm. (If your pan is crowded, cook in two batches to maintain a good sear.)

Vegetables & Optional Peppers

    Caramelize onions & mushrooms

    In the same skillet, reduce heat to medium and add 1 tbs butter and 1 tbs vegetable oil. Add the thinly sliced onions and a pinch of 0.25 tsp salt. Cook, stirring occasionally, for 6–8 minutes until the onions are softened and starting to brown. Add the sliced mushrooms, 0.25 tsp black pepper, and continue to cook 4–6 more minutes until mushrooms release moisture and both vegetables are golden and tender. Taste and adjust seasoning.

    Add optional peppers

    If using hot or sweet peppers, stir them into the onions and mushrooms for the last 1–2 minutes to warm through. Remove vegetables from the skillet and return to the plate with the steak, keeping everything warm.

Cheese, Roll Toasting & Assembly

    Toast rolls

    Wipe skillet if needed, then reduce heat to medium-low. Butter the cut sides of each hoagie roll with about 0.5 tsp butter per side. Place rolls, cut-side down, in the skillet and toast until golden and crisp, 1–2 minutes. Remove and set aside open-faced.

    Combine steak and veggies

    Return the cooked steak and vegetable mixture to the skillet over low heat and stir to combine so flavors meld for 30–60 seconds.

    Melt cheese over filling

    Divide the steak-and-vegetable mixture evenly into four mounds in the skillet (or on a sheet if assembling on a tray). Top each mound with one slice of white American cheese (fold slices if needed to cover). Cover the skillet with a lid or tent tightly with foil and steam 30–45 seconds until cheese is fully melted over the steak.

    Assemble sandwiches

    Using a spatula, scoop each cheesy steak portion onto the toasted bottom halves of the rolls. Add any optional hot sauce to taste and sprinkle with chopped parsley if using. Close the rolls and serve immediately.

    Serve the Classic Cheesesteak hot. Offer extra pepper slices, hot sauce, or pickles on the side. Leftovers keep in an airtight container in the fridge for up to 2 days; reheat gently in a skillet to preserve texture.
