Prepare Wagyu
Pat the Wagyu roast or slices dry with paper towels. If using a roast, very thinly slice across the grain after it is slightly chilled to 1/8"–1/4" thickness. Season the slices evenly with kosher salt, freshly ground black pepper, and garlic powder on both sides.

Sear the beef
Heat a large heavy skillet or cast-iron pan over medium-high heat until hot. Add 1 tablespoon butter and swirl to melt. Working in batches if necessary, sear the Wagyu slices for 20–45 seconds per side — just until browned at the edges (Wagyu is best served medium-rare to medium). Remove seared slices to a plate and tent with foil to keep warm. Repeat with remaining beef, adding the second tablespoon of butter if the pan is dry.

Toast rolls and melt cheese
Preheat oven broiler or set oven to 400°F (200°C). Split the baguette or rolls lengthwise. Spread mayonnaise evenly on the cut sides. Place the bottom halves on a baking sheet, mound warmed Wagyu slices evenly across each bottom half, then top the meat with 2 slices of Swiss cheese per sandwich. Place under the broiler or in the oven just until cheese is melted and bread edges are lightly toasted, about 1–3 minutes under the broiler — watch carefully to avoid burning.

Assemble
Place the top roll halves over the melted cheese, press gently. Sprinkle a small pinch of freshly ground black pepper over each sandwich and garnish with a few thyme leaves if desired. Keep sandwiches warm while you finish the Au Jus.
Au Jus Sauce

Combine base ingredients
In a medium saucepan, combine 4 cups beef consomme or broth, 1/2 cup dry red wine (if using), 1 tablespoon soy sauce or Worcestershire, 1 teaspoon onion powder, and 1 smashed garlic clove. Bring the mixture to a gentle simmer over medium heat.

Reduce and finish
Allow the liquid to simmer and reduce slightly for 6–8 minutes to concentrate flavor. Taste and adjust seasoning with additional soy sauce or a pinch of salt and pepper if needed. Remove and discard the smashed garlic clove. Stir in 1 tablespoon cold butter off the heat to add sheen and richness.

Optional slight thickening
If you prefer a slightly thicker jus, mix 1 teaspoon cornstarch with 1 tablespoon cold water to form a slurry. Whisk the slurry into the simmering jus and cook for 1 minute until it slightly thickens. Remove from heat.

Serve
Ladle the Au Jus into small bowls or ramekins and serve hot alongside the assembled Wagyu French Dip sandwiches for dipping. Provide extra jus for dunking as desired.
