Prepare the Potatoes

Preheat the oven to 425°F (220°C). Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to resemble fries.

Season the Fries

In a large bowl, toss the cut potatoes with olive oil, garlic powder, salt, and black pepper until evenly coated.

Bake the Fries

Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.

Add Parmesan and Parsley

Remove the fries from the oven and immediately sprinkle grated Parmesan cheese and chopped parsley over them while they are still hot. Toss gently to combine.

Mix the Aioli

In a small bowl, combine the mayonnaise, minced garlic, and lemon juice. Stir well until smooth and creamy.
