    Prepare the Potatoes

    Peel the potatoes and slice them into thin rounds, about 1/8 inch thick.

    Prepare the Onions

    Peel and slice the onion thinly.

    Cook the Potatoes and Onions

    In a large non-stick skillet, heat the olive oil over medium heat. Add the sliced potatoes and onions, and season with salt and black pepper. Cook gently, stirring occasionally, until the potatoes are tender and slightly golden, about 15-20 minutes.

    Beat the Eggs

    While the potatoes and onions are cooking, crack the eggs into a large bowl and whisk them until well combined. Season with a pinch of salt.

    Combine Mixture

    Once the potatoes and onions are cooked, drain them from the oil and add them to the bowl with the beaten eggs. Stir to combine.

    Cook the Tortilla

    Wipe the skillet clean and return it to the heat. Add a little of the reserved olive oil, and pour the egg and potato mixture into the skillet. Cook on medium-low heat for about 5-7 minutes, until the edges set.

    Flip the Tortilla

    Using a large plate, carefully invert the tortilla onto the plate and slide it back into the skillet to cook the other side. Cook for an additional 5-7 minutes, until set and golden brown.

    Serve

    Once cooked, slide the tortilla onto a serving plate. Allow it to cool slightly before slicing into wedges. It can be served warm or at room temperature.
