    Prepare the Tuna

    Pat the bluefin tuna steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Tuna

    Heat the olive oil in a heavy skillet over medium-high heat. When the oil is shimmering, add the tuna steaks. Sear for about 1.5 to 2 minutes on each side for rare, or longer if desired. Remove from heat and let rest.

Cucumber and Avocado Citrus Salad

    Prepare the Ingredients

    Slice the cucumber into thin rounds and the avocado into cubes. Segment the orange and lime, removing the skin and pith, and chop into small pieces.

    Mix the Salad

    In a bowl, combine the cucumber, avocado, orange, lime, and cilantro. Add salt to taste and gently toss to combine.

Ponzu Gel

    Prepare the Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes until soft. In a small saucepan, combine the soy sauce, rice vinegar, and mirin and bring to a simmer.

    Combine and Set

    Remove the saucepan from heat, squeeze excess water from the gelatin sheets, and stir them into the warm liquid until dissolved. Pour the mixture into a shallow dish and refrigerate until set, about 1-2 hours.
