Salmon Preparation

Season the Salmon
Pat the Bluefin salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Sear the Salmon
In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the salmon fillets to the skillet skin-side down. Sear for about 4-5 minutes until the skin is crispy and golden brown. Flip the salmon and cook for an additional 3-4 minutes until the salmon is cooked to your desired doneness. Remove from heat and let it rest.

Season the Salad
Add salt and black pepper to taste. Gently toss the salad to combine all ingredients evenly.
Ponzu Gel Preparation

Make the Ponzu Gel
In a small saucepan, combine the ponzu sauce and agar-agar powder. Bring to a boil over medium heat, stirring constantly. Once boiling, reduce the heat and simmer for 1-2 minutes until the agar-agar has dissolved completely.

Set the Gel
Pour the ponzu mixture into a shallow dish and let it cool at room temperature until set, about 30 minutes.
