Preparation

    Prepare the Seafood

    Ensure all seafood is cleaned, peeled, and deveined. Set aside.

    Prepare the Broth

    In a saucepan, heat the chicken or seafood broth and keep it warm over low heat.

Cooking

    Sauté Vegetables

    In a large paella pan or skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes.

    Add Bell Pepper

    Stir in the diced red bell pepper and cook for an additional 2-3 minutes until softened.

    Add Rice and Spices

    Add the bomba or arborio rice to the pan, along with the saffron, smoked paprika, salt, and black pepper. Stir well to coat the rice with the oil and spices.

    Add Broth

    Pour in the warm broth and bring to a boil. Reduce heat to medium-low and simmer for about 10 minutes, without stirring.

    Add Seafood

    After 10 minutes, add the shrimp, mussels, squid, and fish chunks evenly over the rice. Sprinkle the green peas on top.

    Cook Until Done

    Cover the pan with a lid or aluminum foil and cook for another 10-15 minutes, or until the seafood is cooked through and the rice has absorbed the liquid.

    Rest

    Remove the pan from heat and let it rest for 5 minutes before serving.

Serving

    Serve the Paella
