Method

Preparation

  1. 1

    Marinate the Chicken

In a bowl, combine olive oil, salt, black pepper, garlic powder, and onion powder. Add the chicken breasts and coat them well with the marinade. Let it sit for at least 30 minutes.

  2. 2

    Grill the Chicken

Preheat the grill to medium-high heat. Once hot, place the marinated chicken breasts on the grill. Cook for about 6-8 minutes on each side or until fully cooked and no longer pink in the center. Remove from the grill and let it rest for 5 minutes.

  3. 3

    Slice the Chicken

After resting, slice the grilled chicken into thin strips.

Assembly

  1. 4

    Prepare the Quesavinas

In a clean skillet, place a flour tortilla over medium heat. Sprinkle a quarter of the shredded Monterey Jack cheese on one half of the tortilla. Add a portion of the sliced grilled chicken on top of the cheese. Fold the tortilla in half to cover the filling.

  2. 5

    Cook the Quesavinas

Cook the folded tortilla for about 2-3 minutes on each side or until the cheese is melted and the tortilla is golden brown. Repeat this process for the remaining tortillas.

Serving

  1. 6

    Plate and Serve

Cut each quesavina in half and serve hot with a dollop of sour cream, a sprinkle of chopped cilantro, and lime wedges on the side for squeezing.
