Prepare the Ingredients
Gather all the ingredients: Pisco, fresh lime juice, simple syrup, egg white, and bitters. Ensure you have a cocktail shaker, strainer, and serving glass ready.

Combine Ingredients
In the cocktail shaker, add 2 ounces of Pisco, 1 ounce of fresh lime juice, 0.75 ounces of simple syrup, and 1 whole egg white.

Dry Shake
Seal the cocktail shaker and shake vigorously without ice for about 15 seconds. This helps to emulsify the egg white, creating a frothy texture.

Shake with Ice
Add ice to the shaker and shake again for another 15-20 seconds until well chilled.

Strain the Mixture
Using a strainer, pour the mixture into a chilled coupe or rocks glass. Ensure to leave the froth on top.

Add Bitters
Finally, add 2 dashes of bitters on top of the froth. You can use Angostura bitters or any aromatic bitters of your choice.
