For the Patatas

    Prepare the Potatoes

    Peel the potatoes and cut them into bite-sized cubes.

    Fry the Potatoes

    Heat the olive oil in a large frying pan over medium heat. Once hot, add the potato cubes and fry until golden brown and crispy, about 15-20 minutes. Stir occasionally to ensure even cooking.

    Season the Potatoes

    Once the potatoes are golden and crispy, season them with salt, paprika, and garlic powder. Toss to coat evenly and remove from heat.

For the Spicy Tomato Sauce

    Sauté Onion and Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until soft, about 5 minutes. Then, add the minced garlic and sauté for an additional minute.

    Add Crushed Tomatoes and Spices

    Stir in the crushed tomatoes, red chili flakes, salt, and sugar. Bring the mixture to a simmer and cook for about 10-12 minutes, allowing the flavors to meld.

    Finish the Sauce

    Add the vinegar to the sauce, stir well, and cook for another 2 minutes. Remove from heat and set aside.

    In a bowl, combine the mayonnaise, minced garlic, lemon juice, and salt. Mix well until smooth and creamy.
