Method

Preparing the Potatoes

    Wash and Cut Potatoes

    Wash the russet potatoes thoroughly under cold water. Cut them into bite-sized cubes, ensuring they are uniform for even cooking.

    Boil Potatoes

    Place the cubed potatoes in a large pot, cover with water, and add 1 tsp of salt. Bring to a boil over high heat. Once boiling, reduce to medium heat and simmer for about 5-7 minutes, until slightly tender but not fully cooked.

    Drain and Dry

    Drain the potatoes in a colander and let them sit for a few minutes to dry completely. This helps achieve maximum crispiness when frying.

    Fry Potatoes

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the dried potatoes in a single layer. Fry until golden brown and crispy, about 5-7 minutes, flipping occasionally.

    Once the potatoes are crispy, remove them from the skillet and place them on a paper towel-lined plate to absorb excess oil. Season with salt, black pepper, and smoked paprika to taste.

Making Smoked Paprika Aioli

    In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, smoked paprika, and salt.

    Whisk together until smooth and creamy. Taste and adjust seasoning if necessary, adding more salt or lemon juice to suit your preference.
