    Prepare the Ingredients

    Gather all the ingredients. Cut the chicken and rabbit into pieces, and measure out the rice, broth, and vegetables.

    Soak the Saffron

    In a small bowl, soak the saffron threads in 2 tablespoons of warm water to release their flavor and color.

Cooking

    Heat the Olive Oil

    In a large paella pan or a wide skillet, heat the olive oil over medium heat.

    Brown the Meat

    Add the chicken and rabbit pieces to the pan. Cook until browned on all sides, about 5-7 minutes.

    Add Vegetables

    Stir in the minced garlic, grated tomato, green beans, and sliced bell pepper. Cook for another 5 minutes until the vegetables are softened.

    Add Rice and Spices

    Add the Bomba rice to the pan, stirring to coat it with the oil and juices. Sprinkle in the paprika, salt, and black pepper.

    Add Broth and Saffron

    Pour in the chicken broth and add the soaked saffron along with its liquid. Bring to a boil.

    Simmer

    Reduce the heat to low and let the paella simmer uncovered for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.

    Rest and Serve

    Remove the pan from heat and let it rest for 5 minutes. Serve the paella directly from the pan.
