Method

Mushrooms

  1. 1

    Prepare the Mushrooms

Clean the oyster mushrooms gently with a damp cloth to remove any dirt. Cut larger mushrooms into halves or quarters for even cooking.

  2. 2

    Sear the Mushrooms

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the oyster mushrooms, season with salt and black pepper, and sauté for about 5-7 minutes until they are golden brown and tender. Remove from heat and set aside.

Goat Cheese Mousse

  1. 3

    Make the Mousse

In a mixing bowl, combine the goat cheese, heavy cream, garlic powder, fresh chives, and salt. Use an electric mixer or a whisk to blend until smooth and creamy. Transfer the mousse to a piping bag or a bowl and refrigerate until ready to use.

Crispy Onions

  1. 4

    Prepare the Onions

Slice the large onion thinly into rings. In a bowl, mix the flour, cornstarch, and salt. Dredge the onion rings in the flour mixture until well coated.

  2. 5

    Fry the Onions

Heat the vegetable oil in a deep pot or fryer to 180°C (350°F). Carefully add the coated onion rings in batches and fry until they are golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Roasted Tomatoes

  1. 6

    Roast the Tomatoes

Preheat the oven to 200°C (400°F). In a baking dish, toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and black pepper. Roast in the oven for 15-20 minutes until the tomatoes are blistered and soft.
