Prepare the Chicken

Grill the Chicken
Season the chicken breasts with salt and black pepper. Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side until cooked through and no longer pink in the center. Remove from grill and allow to rest for 5 minutes before slicing.
Sauté the Vegetables

Sauté Bell Peppers and Onions
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and bell peppers. Cook for about 5-7 minutes, stirring occasionally, until the onions are caramelized and the peppers are tender. Season with salt and pepper to taste. Remove from heat.
Assemble the Tacos

Fill the Tacos
Slice the grilled chicken into strips. On each tortilla, layer the sliced chicken, the sautéed bell peppers and onions, and sprinkle with shredded cheese. Top with fresh chopped cilantro.

Serve the tacos immediately with your favorite salsa or hot sauce on the side.
