Preparation

    Prepare the Potatoes

    Peel and cut the potatoes into thick strips to make fries. Soak them in water for about 30 minutes to remove excess starch, then drain and pat dry.

    Marinate the Steak

    Season the ribeye steak with salt, black pepper, and a tablespoon of soy sauce. Let it marinate for about 15 minutes.

    Chop the Vegetables

    Thinly slice the onion and tomatoes. Mince the garlic cloves.

Cooking

    Fry the Potatoes

    Heat vegetable oil in a deep pan over medium-high heat. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels, season with salt.

    Cook the Steak

    In a separate skillet, heat some oil over high heat. Add the marinated steak and sear for about 3-4 minutes on each side for medium-rare (cook longer if desired). Remove from the skillet and let it rest before slicing.

    Saute the Vegetables

    In the same skillet, add a little more oil if necessary. Add the sliced onions and sauté until caramelized, about 5 minutes. Add the minced garlic and sauté for an additional minute. Then add the sliced tomatoes and cook until softened, about 2 minutes.

    Combine Everything

    Slice the rested steak and add it to the skillet with the vegetables. Pour in the soy sauce and vinegar, stir well to combine, and cook for an additional minute.

    Fry the Eggs

    In a separate pan, fry the eggs sunny-side-up until the whites are set and the yolks are still runny.

Serving

    Plate the Dish

    On a plate, serve a portion of the steak and vegetable mixture alongside the crispy fries. Top with a fried egg on each serving. Enjoy!
