Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed unsalted butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Form the Dough
Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Knead gently on a floured surface for a couple of minutes until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Prepare the Filling
In a medium bowl, combine the shredded cooked chicken and buffalo sauce. Mix well. Add the softened cream cheese and mix until creamy. Stir in the blue cheese crumbles and chopped green onions until evenly distributed.

Roll Out the Dough
On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cutter (3 inches in diameter) to cut out circles from the dough.

Fill the Empanadas
Place a small spoonful of the buffalo chicken filling in the center of each dough circle. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.

Serve hot with additional blue cheese crumbles on the side for dipping.
