    Prepare the base

    In a saucepan, melt the butter over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

    Make the roux

    Stir in the flour and cook for about 2 minutes, stirring constantly to form a roux. Gradually pour in the milk while whisking to avoid lumps. Continue to cook until the mixture thickens, about 3-5 minutes.

    Add ham and season

    Stir in the chopped cooked ham, salt, black pepper, and nutmeg. Mix well and remove from heat. Allow the mixture to cool, then refrigerate for at least 1 hour.

    Form croquettes

    Once the mixture is cooled, scoop out a tablespoon of the mixture and roll it into a small cylinder or ball shape. Repeat until all the mixture is used.

    Prepare for frying

    In a shallow dish, beat the eggs. Place the breadcrumbs in another shallow dish. Dip each croquette first into the egg, then coat with breadcrumbs.

    Fry the croquettes

    In a large skillet, heat the olive oil over medium-high heat. Once hot, fry the croquettes in batches until golden brown, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.

    Mix the ingredients

    In a mixing bowl, combine the minced garlic, egg yolk, and lemon juice. Whisk together until well blended.

    Emulsify

    Slowly drizzle in the olive oil while continuously whisking to create a creamy texture. If it becomes too thick, add a few drops of water to thin it out. Season with salt to taste.
