    Prepare the Chorizo

    Slice the chorizo sausage into thick rounds, about 1 inch each.

    Chop the Aromatics

    Finely chop the onion and mince the garlic cloves.

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Cook the Chorizo

    Add the sliced chorizo to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chorizo is browned and releases its oils.

    Deglaze with Red Wine

    Pour in the red wine, scraping up any browned bits from the bottom of the skillet. Add the bay leaves, salt, black pepper, and paprika.

    Simmer

    Reduce the heat to low and let the mixture simmer for 15-20 minutes, allowing the flavors to meld and the sauce to reduce slightly.

    Serve

    Remove from heat and discard the bay leaves. Serve the chorizo al vino warm, either on its own or with crusty bread.
