Slice the chorizo sausage into bite-sized pieces.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

Add the sliced chorizo to the skillet and cook until browned, about 5-7 minutes, stirring occasionally.

Pour in the dry cider and add the bay leaf. Bring the mixture to a simmer.

Reduce the heat to low and let it simmer for about 15-20 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
