    Slice the Onions

    Peel and slice the onions into thin rings.

    Prepare the Green Onions

    Wash the green onions and chop them finely, using both the white and green parts.

Cooking

    Cook the French Fries

    In a deep fryer or a large pot, heat oil to 350°F (175°C). Fry the French fries according to package instructions until golden and crispy. Drain on paper towels and set aside.

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized. Remove from the skillet and set aside.

    Cook the Ribeye Steak

    In the same skillet, add another tablespoon of olive oil and increase the heat to high. Once hot, add the shaved ribeye steak, season with salt and black pepper, and cook for 3-5 minutes until browned and cooked to your desired doneness. Remove from heat.

    Fry the Eggs

    In a separate non-stick skillet, crack the eggs and fry them sunny-side up or to your liking. Season with a little salt and pepper.

Assembly

    Plate the Dish

    On a large serving platter, layer the French fries at the bottom. Top with the cooked ribeye steak and caramelized onions. Finally, place the fried eggs on top and garnish with chopped green onions.
