Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Pan Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Cook the Pimentos
In the same skillet, add the pimentos and sauté for about 2-3 minutes until they are heated through.

Deglaze with White Wine
Pour in the white wine to deglaze the skillet, scraping any browned bits from the bottom. Let it simmer for 2-3 minutes until slightly reduced.

Add Fresh Herbs
Stir in the fresh herbs and return the chicken to the skillet, allowing it to soak up the flavors for another minute.

Serve
Plate the chicken breasts, spoon the pimento and wine sauce over the top, and serve with potato crisps on the side.
