Prepare the Squid
Ensure the squid is cleaned and cut into rings, about 1 inch wide.

Mix Dry Ingredients
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix until well combined.

Coat the Squid
Dredge the squid rings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Heat the Oil
In a deep frying pan, heat the olive oil over medium-high heat until it reaches 180°C (350°F).

Fry the Calamares
Carefully add the coated squid rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove using a slotted spoon and drain on paper towels.

Serve
Serve the fried calamari hot with garlic aioli on the side.
For the Garlic Aioli

Combine Ingredients
In a bowl, mix together the mayonnaise, minced garlic, lemon juice, olive oil, and salt until well blended.

Adjust Seasoning
Taste the aioli and adjust seasoning with extra salt or lemon juice if needed.

Refrigerate the aioli for at least 30 minutes to allow the flavors to meld.
