Salsa Verde

Method

Preparation of Skewers

  1. 1

    Prepare the Skewers

Soak the wooden skewers in water for at least 30 minutes to prevent burning on the grill.

  2. 2

    Cut the Meats

Cut the beef sirloin, chicken breast, and pork tenderloin into 1-inch cubes.

Marinade Preparation

  1. 3

    Prepare the Marinade

In a large bowl, combine minced garlic, cumin powder, paprika, olive oil, red wine vinegar, salt, and black pepper. Mix well.

  2. 4

    Marinate the Meats

Add the cubed meats to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Salsa Verde Preparation

  1. 5

    Blend Salsa Verde

In a blender, combine fresh cilantro, jalapeño (seeded for less heat if desired), lime juice, olive oil, and salt. Blend until smooth. Adjust seasoning if necessary.

Grilling

  1. 6

    Assemble the Skewers

Thread the marinated beef, chicken, and pork onto the soaked skewers, alternating the types of meat.

  2. 7

    Preheat the Grill

Preheat your grill to medium-high heat.

  3. 8

    Grill the Skewers

Place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the meats are cooked through and have nice grill marks.

  4. 9

    Serve

Remove the skewers from the grill and let them rest for a few minutes. Serve with salsa verde drizzled on top or on the side.
