    Chill the glass

    Place a martini (coupe) glass in the freezer for 10 minutes or fill it with ice water and set aside while you prepare the drink.

    Fill a mixing glass or cocktail shaker with plenty of ice to properly chill and dilute the cocktail.

    Pour 2.5 oz London dry gin and 0.5 oz dry vermouth over the ice in the mixing glass.

    Add 1 dash of orange bitters to the mixing glass (optional, adds aromatic lift).

    Stir gently with a bar spoon for 20–30 seconds (about 15–20 full spoon rotations) until the mixing glass is well chilled and the dilution is approximately 20–25 ml; stirring keeps the drink clear and silkier than shaking.

    If you used ice water to chill the glass, dump it now. Strain the chilled martini from the mixing glass into the chilled martini (or coupe) glass using a julep strainer or Hawthorne/mesh strainer.

    Express the lemon twist over the surface of the drink by holding the peel skin-side down about 3–4 inches above the glass and giving it a quick twist to spray oils across the surface. Run the peel around the rim and drop it into the drink. Alternatively, thread a green olive on a cocktail pick and place it in the glass.

    Serve immediately while very cold. Provide a small napkin or coaster. Sip slowly to appreciate the aromatics.
