Chill glass

Place a rocks glass in the freezer or fill it with ice and cold water to chill while you assemble the cocktail.

Make rosemary simple syrup (if not prepared)

Combine equal parts granulated sugar and water (e.g., 1/2 cup each) in a small saucepan with 2–3 fresh rosemary sprigs. Warm over low heat, stirring until sugar dissolves. Let steep off heat for 15–30 minutes, then strain and cool. Store refrigerated.

Build & Stir

In a mixing glass filled with plenty of ice, pour 1 oz gin, 1 oz Campari, and 1 oz sweet vermouth.

Add 1/2 tablespoon rosemary simple syrup to introduce a subtle earthy herb note. If you want more depth, add 1/4 oz of an amaro (like Averna) — optional; it will round and deepen the flavors.

Stir the mixture briskly with a bar spoon for 20–30 seconds (about 20–30 full rotations) until well chilled and slightly diluted. The goal is a silky texture and bright but integrated flavors.

Finish & Garnish

Discard the ice or water from the chilled rocks glass and place one large clear ice cube in the glass.

Strain the stirred cocktail over the large ice cube into the chilled glass.

Express the orange peel: hold the peel over the drink and give it a firm twist to spray oils across the surface, then rub the peel around the rim and drop it into the glass.

Lightly slap the rosemary sprig between your palms to wake the aromatics and place it beside the orange peel as a garnish. If desired, briefly torch the rosemary (carefully) for an extra smoky/earthy aroma — optional.
