Cocktail

  1. 1

    Build the cocktail

Chill a rocks glass or highball by filling with ice and setting aside while you measure ingredients.

  2. 2

Discard the chilling ice from the glass and add 4 large ice cubes to the glass so the drink stays cold but not watery.

  3. 3

Measure and pour 1 oz dry gin, 1 oz white vermouth, and 1 oz white bitter liqueur into the glass over the ice.

  4. 4

Stir gently with a bar spoon for 12–18 seconds (10–15 full turns) to properly chill and lightly dilute the mixture.

  5. 5

Top the stirred mixture with 3 oz cold Italian-style pilsner beer. Pour gently down the side or over the back of a spoon to preserve carbonation and avoid foaming.

  6. 6

Give a single gentle stir (2–3 turns) to integrate the beer with the cocktail base without flattening it.

  7. 7

    Garnish and finish

Express the oils from a lemon twist over the surface of the drink by holding the twist about 2–3 inches above the glass and giving it a firm squeeze away from you. Rub the peel around the rim if desired, then drop the twist into the glass.

  8. 8

Serve immediately while the beer is still effervescent.
