Chill glass
Place a large wine glass or rocks glass in the freezer for 5–10 minutes or fill it with ice water while you prepare ingredients to ensure the drink stays cold.

Add base spirits
Discard the ice water from the glass if used and add 4 large ice cubes. Pour 2 tablespoons of Aperol and 1 tablespoon of Gran Classico (or the Campari + sweet vermouth substitute) over the ice.

Build with sparkling wine
Slowly pour in 3 oz of chilled dry sparkling wine (Prosecco) down the side of the glass to preserve bubbles and create a layered look.

Top with soda
Gently add 1 oz of chilled soda water to top and lift the flavors. If using bitters, add a dash now and stir once gently with a bar spoon to combine — 3 slow turns. Do not over-stir to keep effervescence.

Garnish and serve
Express the oil of a fresh orange peel over the drink by holding the peel skin-side down and giving it a firm twist above the glass, then drop the peel in. Optionally rest an orange wheel on the rim. Serve immediately while fizzy.

If you prefer a slightly less bitter, sweeter profile, increase the Gran Classico substitute to 1.5 tbs or add a small splash (about 1/4 tsp) of simple syrup. Adjust to taste.
