    Chill glass

    Place a Champagne flute or coupe in the refrigerator or freezer while you prepare the cocktail to keep the drink cold longer.

    Combine base ingredients

    In a cocktail shaker, add 1.5 oz gin, 0.75 oz freshly squeezed lemon juice, 0.5 oz simple syrup, and about 1 cup of ice. The ice amount should be enough to fill the shaker roughly halfway so the ingredients chill quickly without over-diluting.

    Shake

    Secure the shaker and shake vigorously for about 10–15 seconds, until the outside of the shaker feels very cold and you see condensation. This both chills and dilutes the mixture appropriately.

    Strain into glass

    Remove the chilled flute or coupe from the fridge. Double-strain the shaken mixture (using the shaker's strainer and a fine mesh strainer if available) into the glass to remove small ice shards and any pulp from the lemon juice.

    Top with sparkling wine

    Carefully top the strained cocktail with about 3 oz of chilled Champagne or dry sparkling wine. Pour slowly down the side of the glass to preserve the bubbles and avoid foaming over.

    Garnish and serve

    Express the oils of a lemon twist over the drink by holding the twist over the glass and bending it to spray the oils onto the surface, then drop it into the flute or rest on the rim. Serve immediately.
