Melt chocolate and butter

Place chopped dark chocolate and butter in a heatproof bowl. Set the bowl over a saucepan of gently simmering water (double boiler), making sure the bowl does not touch the water. Stir frequently until fully melted and smooth, about 4–6 minutes. Remove from heat and let cool slightly (2–3 minutes).

Temper egg yolks (optional detail)

Whisk the egg yolks lightly in a small bowl. Stir about 1 tablespoon of the warm melted chocolate into the yolks to warm them, then whisk the tempered yolks back into the main chocolate mixture until fully combined. This step helps prevent cooking the yolks and yields a silkier mousse.

Whisk whites with sugar

In a clean, dry mixing bowl, whisk the egg whites with a pinch of salt until they form soft peaks. Gradually add the granulated sugar, continuing to whisk until glossy, stiff peaks form (but not dry). This can be done with an electric mixer on medium-high speed for 3–5 minutes.

Incorporate egg whites

Fold about one-quarter of the whipped egg whites into the chocolate mixture with a flexible spatula to lighten it. Gently fold in the remaining egg whites in two additions, using a cutting-and-folding motion to preserve as much air as possible. Stop when no white streaks remain and the mixture is homogeneous.

Chill mousse base

Divide the mousse into serving glasses or a single bowl. Smooth the tops, cover, and refrigerate for at least 2 hours (preferably 3–4 hours) until set and chilled.

Whipped Cream Topping

About 10–15 minutes before serving, chill a mixing bowl and whisk (or beaters) in the freezer for 5 minutes. Pour the chilled heavy cream into the bowl. Add powdered sugar and vanilla. Whip on medium-high speed until soft to medium peaks form, about 2–3 minutes. Take care not to overwhip — the cream should be smooth and hold a peak but still be slightly billowy.

Spoon or pipe a dollop of whipped cream onto each chilled mousse just before serving. Smooth or create a decorative peak as desired.

Garnish (optional)

Dust each mousse lightly with cocoa powder using a fine sieve. Sprinkle shaved chocolate or chocolate curls on top and place 1–2 fresh berries per serving. Serve immediately.
