Prepare Meats

Cook bacon
Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Lay bacon slices in a single layer on the rack. Bake for 12–18 minutes until crisp but still slightly pliable. Remove and let drain on paper towels; reserve bacon fat on the sheet for flavor if desired. Once cool, chop into 1/2" pieces.

Brown sausage
Heat a large skillet over medium-high heat and add the bulk pork sausage. Break it up with a spatula and cook until nicely browned and cooked through, about 6–8 minutes. If the sausage releases a lot of fat, drain off excess to leave about 1 tablespoon in the pan for flavor. Transfer cooked sausage to a bowl and let cool slightly.

In a large mixing bowl combine the chopped bacon, browned sausage, and prepared pepperoni. Add the eggs, chopped parsley, garlic powder, kosher salt, and freshly ground black pepper. Mix thoroughly until the mixture comes together and the eggs evenly coat the pieces. The eggs act as a binder — the mixture should hold when pressed; if too loose, add one more beaten egg.

Form patties or bake loaf
Decide whether to make individual patties or a baked loaf: For patties, portion mixture into eight 3–4 oz balls and press into 3/4"-thick rounds. For a loaf, press mixture into a small oiled loaf pan (8x4" or similar).

Cook patties
Heat a large skillet over medium heat and add 1 teaspoon olive oil. When shimmering, add patties (work in batches if needed) and cook 4–5 minutes per side until deeply browned and cooked through (internal temp 160°F / 71°C). Transfer to a plate and tent with foil to keep warm.

Bake loaf (alternative)
If using a loaf, preheat oven to 375°F (190°C). Lightly oil the loaf pan, press mixture in evenly, and bake 30–35 minutes until the internal temperature reaches 160°F (71°C) and the top is browned. Let rest 10 minutes, then slice into 8 portions.

Storage: Refrigerate leftovers in an airtight container for up to 4 days or freeze portions up to 3 months. Reheat gently in a skillet or oven to retain crisp edges.
