Prepare bacon
Preheat oven to 400°F (205°C). Line a rimmed baking sheet with foil and place a wire rack on top. Lay bacon slices in a single layer on the rack without overlapping. Bake for 15–20 minutes until edges are crisp but not brittle. Remove and let cool slightly; reserve bacon fat for another use or discard.

Make Sriracha hot honey (if not store-bought)
Combine 1/2 cup honey with 2–3 tablespoons Sriracha in a small saucepan over low heat. Warm gently, stirring until blended, then remove from heat. Taste and adjust heat-to-sweet balance. Let cool to room temperature; it will thicken slightly.

Cut cooled bacon slices in half lengthwise (or into thirds if very long). Keep warm in a low oven (200°F / 95°C) while assembling, if desired.
Whipped Cream Cheese Filling

In a medium bowl or the bowl of a stand mixer, combine softened cream cheese, softened butter, and sour cream. Beat with an electric mixer on medium speed for 1–2 minutes until smooth and whip-like.

Add garlic powder, chopped chives, black pepper, and salt. Mix on low speed until evenly incorporated. Taste and adjust seasoning. Transfer the whipped cream cheese to a piping bag fitted with a medium round tip (or a zip-top bag with corner snipped).
Jalapeños & Assembly

Prepare jalapeños: Wearing gloves if preferred, slice each jalapeño in half lengthwise and remove the seeds and membranes (for less heat) with a spoon. For milder bites, remove all seeds; for medium heat, leave some membranes.

Pipe or spoon the whipped cream cheese into each jalapeño half, filling to just below the rim and smoothing the surface. Use about 1 tablespoon of filling per half depending on pepper size.

Wrap each filled jalapeño half with a half-slice of baked bacon. Secure with a toothpick by skewering through the bacon and pepper about 3/4 of the way through (not all the way through to avoid popping).

Arrange the assembled jalapeño poppers on a parchment-lined baking sheet seam-side down so they won’t unravel. If you prefer, chill 10–15 minutes to firm the filling and set the bacon.

Optional finished bake (for warmed filling and crisp bacon edges): Preheat oven to 375°F (190°C). Bake assembled poppers 10–12 minutes until bacon edges are crisped to your liking and filling is warmed through. Watch carefully so bacon doesn't burn.

Remove from oven and transfer to a serving platter. Drizzle each popper with Sriracha hot honey (about 1 teaspoon per popper, or to taste). Sprinkle extra chopped chives and a touch of lemon zest for brightness if using.
