    Measure and prepare

    Shred the mozzarella and fontina if not pre-shredded. Finely grate the asiago and parmesan. Use a fine side of the grater for the hard cheeses so they melt smoothly.

    Combine cheeses in a large mixing bowl and toss gently to even out distribution. This helps ensure consistent melting and flavor in each bite.

Seasoning & Binder

    In a small bowl, whisk together the cream, garlic powder, black pepper, and salt until smooth. The cream acts as a binder and helps create a cohesive, creamy texture when the cheeses melt.

    Pour the seasoned cream over the combined cheeses. Using a rubber spatula, fold the mixture gently until all strands and shreds are lightly coated. Do not overwork; you want the cheese strands to remain slightly loose so they melt evenly.

    If using, stir in the chopped fresh parsley for a bright, herby note.

Assembly & Melting

    Preheat oven to 375°F (190°C) if baking, or preheat a heavy skillet over medium-low heat if melting on the stovetop.

    For oven method: Transfer the cheese mixture to a small ovenproof dish (6–8 inch / 15–20 cm) and spread into an even layer about 1 inch thick. Bake on the middle rack for 8–12 minutes until the cheeses are melted and bubbling and the top is lightly golden. Watch closely to prevent burning.

    For stovetop method: Place a nonstick or well-seasoned cast-iron skillet over medium-low heat. Add the cheese mixture in an even layer and cover with a lid. Allow the cheese to melt gently for 4–7 minutes, checking after 3 minutes, until the cheeses are fully melted and bubbling. Avoid high heat to prevent separation of oils.

    Remove from heat and let rest 1–2 minutes so the blend sets slightly but remains gooey.

Finish & Serve

    Drizzle with olive oil and sprinkle with red pepper flakes if using. Serve immediately with your choice of accompaniments: toasted bread, crostini, crackers, or as a pizza topping or pasta mix-in.

    If storing leftovers, cool completely, transfer to an airtight container, and refrigerate up to 3 days. Reheat gently in a low oven (300°F / 150°C) or covered skillet over low heat to avoid graininess.
