    Prepare cheeses

    Measure and shred or finely grate all cheeses. For best melting and texture, use whole-milk fresh mozzarella (not low-moisture pre-shredded) shredded on the large holes of a box grater or with a food processor. Finely grate Asiago and Parmesan so they will distribute evenly and blend smoothly.

    Dry and combine

    Spread the shredded mozzarella, fontina, and provolone on a sheet pan lined with parchment for a few minutes to allow surface moisture to evaporate slightly (5–10 minutes). Toss the grated Asiago and Parmesan with the cornstarch in a small bowl until evenly coated. The cornstarch will help prevent clumping and improve melt and stretch.

    Mix thoroughly

    Place all shredded/grated cheeses into a large mixing bowl. Add the cornstarch-coated Asiago and Parmesan, salt, black pepper, and crushed red pepper (if using). Using clean hands or a large spoon, gently but thoroughly toss until the cornstarch and seasonings are evenly distributed and the cheeses are homogenous in color and texture. Taste a small pinch to check seasoning and adjust salt or pepper if needed.

    Store or use

    Use the blend immediately for pizza, lasagna, baked pasta, sandwiches, or gratins. If storing, transfer to an airtight container and refrigerate up to 3 days or freeze in a freezer-safe bag up to 2 months. If freezing, press out excess air, label with date, and thaw in the refrigerator before using.

Using the Blend (baking / finishing)

    If using on pizza: preheat oven to 500°F (260°C) with a pizza stone or steel if available. Lightly oil the dough with a brush of olive oil, add sauce if desired, and evenly distribute the MC5 cheese blend over the top. Bake 8–12 minutes until cheese is bubbly and edges are golden. Finish with torn fresh basil after baking.

    If using for baked pasta or gratin: preheat oven to 375°F (190°C). Prepare your sauced pasta or vegetable dish in an ovenproof pan, sprinkle the cheese blend evenly over the top, and bake uncovered 15–25 minutes until cheese is melted and lightly browned. For an extra crust, broil 1–2 minutes while watching closely.

    If using for sandwiches or melts: assemble sandwich with desired fillings, top with a generous layer of the cheese blend, and grill or press on medium heat until cheese is fully melted and edges are golden, about 4–6 minutes.
