Prep and marinate
Pat the 4 chicken breasts dry with paper towels. In a shallow bowl, whisk together 3 tbs olive oil, 1 tbs lemon juice, 1 tsp garlic powder, 1 tsp smoked paprika, 1 tsp kosher salt and 1/2 tsp black pepper. Place the chicken in the bowl and coat thoroughly. Marinate at room temperature for 15 minutes or refrigerate up to 2 hours. Remove from fridge 20 minutes before cooking if chilled.

Cook the bacon: Lay 6 slices of bacon in a cold skillet and turn heat to medium. Cook, turning occasionally, until crisp (about 8–10 minutes). Transfer bacon to a plate lined with paper towels and reserve 1 tbs bacon fat in the pan (if desired) for extra flavor. Once cool, chop or crumble the bacon into bite-size pieces.

Optional quick-pickle for red onion (takes 10 minutes): In a small bowl combine 2 tbs warm water, 1 tbs white vinegar, 1 tsp sugar and a pinch of salt. Stir to dissolve, add the sliced red onion and let sit while cooking. Drain before assembling.

Sear and finish chicken: Heat 1 tbs olive oil and 1 tbs butter (or reserved bacon fat + butter) in a large oven-safe skillet over medium-high heat until shimmering. Add the chicken breasts, pressing gently so they make contact. Sear 3–4 minutes without moving until golden-brown, then flip and sear 2 minutes on the other side.

Bake until cooked through: Transfer the skillet to a preheated 375°F (190°C) oven and bake 8–12 minutes, depending on thickness, until internal temperature reaches 165°F (74°C). If you do not have an oven-safe skillet, transfer chicken to a baking dish and pour any pan juices over top before baking.

Add toppings to melt: Remove the skillet from the oven. Immediately top each chicken breast with an even amount of crumbled Gorgonzola (3 oz total) and crumble the cooked bacon over the cheese. Return to the oven for 2–3 minutes just to soften the cheese and warm the bacon so flavors meld.
Ranch Drizzle & Assembly

Make the ranch drizzle: In a small bowl whisk together 1/2 cup buttermilk ranch dressing, 1 tbs mayonnaise, 1/2 tsp lemon zest and 1/4 tsp black pepper until smooth. Taste and adjust seasoning as needed. The mayonnaise slightly thickens the store-bought ranch for a glossy drizzle.

Assemble and serve: Transfer the topped chicken to a serving platter. Scatter the thinly sliced or quick-pickled red onion and chopped/crumbled bacon across the breasts. Drizzle the ranch evenly over each portion (about 2–3 tbs per chicken). Garnish with 1 tbs chopped fresh parsley if using. Serve immediately with sides of your choice.

Notes on timing and substitutions: If using bone-in chicken or thicker breasts, increase oven time and check with a thermometer. For a stronger blue-cheese punch, use an extra ounce of Gorgonzola. For dairy-free ranch, substitute a dairy-free dressing and omit lemon zest if unavailable.
