Dough Preparation
Activate Yeast
In a small bowl, mix warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.
Mix Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
Let the Dough Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Pizza Assembly
Preheat Oven
Preheat your wood-fired pizza oven to about 700°F (370°C) or as hot as it can get.
Shape the Dough
Once the dough has risen, punch it down and divide it into 2-3 equal portions. Shape each portion into a ball, then flatten and stretch into a round pizza base.
Add Toppings
Spread a thin layer of tomato sauce over the base, leaving a small border for the crust. Sprinkle mozzarella cheese, add pepperoni, and fresh basil leaves. Drizzle with olive oil.
Bake the Pizza
Carefully place the pizza in the wood-fired oven. Bake for about 2-3 minutes or until the crust is golden and cheese is bubbly.
Serve
Remove the pizza from the oven, let it cool for a minute, slice, and serve hot.
