Making the Dough

Prepare the Ingredients

On a clean surface or in a large bowl, mound the flour and create a well in the center. Add the salt, eggs, and olive oil into the well.

Mixing

Using a fork, slowly incorporate the flour into the eggs and oil, starting from the inner rim of the well. Continue until the mixture is too stiff to mix with a fork.

Kneading

Bring the dough together with your hands and knead it on a floured surface for about 8-10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.

Resting

Wrap the kneaded dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Rolling Out the Dough

After resting, divide the dough into 4 pieces. Keep the pieces you are not using covered. Flatten one piece slightly and roll it out using a pasta machine or a rolling pin until it reaches your desired thickness.

Cutting the Pasta

Once rolled out, cut the dough into your preferred shape (tagliatelle, fettuccine, etc.) using a knife or pasta cutter. Dust with flour to prevent sticking.

Cooking the Pasta

Boiling

Bring a large pot of salted water to a boil. Add the fresh pasta and cook for 2-4 minutes, or until al dente. Fresh pasta cooks much quicker than dried pasta!

Serving

Drain the pasta and serve with your favorite sauce or toppings.
