Prepare the Potatoes
Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel, twist the towel to squeeze out excess moisture, and transfer to a large bowl.
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat. You want enough oil to cover the bottom of the skillet generously.
Fry the Pancakes
Scoop about 1/4 cup of the potato mixture and shape it into a patty. Carefully place it in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Repeat with remaining mixture.
Drain and Serve
Once the pancakes are cooked, transfer them to a plate lined with paper towels to drain excess oil. Serve hot with sour cream and applesauce on the side, if desired.
