1. Harvesting the Grapes
Select ripe Grenache, Syrah, and Cinsault grapes, ensuring they are free of blemishes. Harvest the grapes and remove any stems.
2. Crushing the Grapes
Crush the harvested grapes gently to release the juice. Use a traditional wine press or your hands to achieve a pulp consistency.
3. Fermentation
Transfer the crushed grapes to a fermentation vessel. Add the yeast to initiate fermentation. Allow to ferment for about 7-10 days at a temperature of 18-22°C (64-72°F).
4. Pressing
After fermentation, press the mixture to separate the liquid wine from the solid grape skins. Collect the wine in a clean vessel.
5. Sulfite Addition
Add sulfites to the wine to prevent oxidation and spoilage. Stir gently to mix.
6. Aging
Allow the wine to age in a cool, dark place for at least 1-3 months. This helps develop the fruity bouquet and hint of spice.
7. Bottling
Once aged, transfer the wine into clean bottles. Seal with corks and label each bottle for storage.
8. Serving
