Prep the garlic butter
Soften the butter to room temperature. In a small bowl, combine softened butter, minced garlic, chopped parsley, lemon juice, salt, and black pepper. Mix thoroughly until smooth and evenly combined. Stir in grated Parmesan if using.
Bake
Place the prepared bread on a baking sheet, buttered side up. Bake in the preheated oven for 8–12 minutes, until the butter melts and the edges start to turn golden. For a crispier, browned top, switch the oven to broil for 1–2 minutes while watching carefully to avoid burning.
Finish
Remove from oven and let cool for 1–2 minutes. If desired, sprinkle a little extra chopped parsley or more grated Parmesan. Slice (if not pre-sliced) and serve warm.

Make the tomato topping
In a bowl, combine the diced tomatoes, finely diced red onion, sliced basil, olive oil, balsamic vinegar (if using), salt, and black pepper. Gently mix and let sit for 5–10 minutes to allow flavors to marry and excess tomato juices to release.
Toast the bread
Preheat oven to 425°F (220°C) or set a broiler. Slice the loaf into 1/2–3/4 inch slices. Place slices on a baking sheet and toast in the oven for 5–7 minutes, or broil 1–2 minutes per side, until golden and crisp. Alternatively, grill the slices briefly on a hot pan.
Rub with garlic
Immediately after toasting, rub the cut side of the halved garlic clove over the warm toasted surface of each slice to impart a gentle garlic flavor.
Top and serve
Spoon the tomato mixture onto each toasted slice just before serving, allowing a little of the tomato juice but not so much that the bread becomes soggy. Garnish with an extra basil leaf if desired and serve immediately.
