Prepare the Mushrooms

Preheat your oven to 400°F (200°C). Clean the wild mushrooms by wiping them with a damp cloth. Cut larger mushrooms into halves or quarters to ensure even roasting.

Make the Black Garlic Glaze

In a small bowl, mash the black garlic cloves with a fork until they form a paste. Mix in the olive oil, salt, and black pepper to create a glaze.

Roast the Mushrooms

In a large mixing bowl, toss the prepared mushrooms with the black garlic glaze and fresh thyme. Spread the mushrooms in a single layer on a baking sheet lined with parchment paper.

Bake

Roast in the preheated oven for 20-25 minutes, or until the mushrooms are golden brown and tender, stirring halfway through for even cooking.

Serve

Remove from the oven and let cool slightly. Serve warm as a side dish or over a bed of grains or salad.
