Crispy Bacon

    Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Arrange bacon slices in a single layer without overlapping. Bake 15–20 minutes, checking at 12 minutes for desired crispness. If using maple syrup, brush each slice lightly during the last 2–3 minutes. Transfer bacon to a plate lined with paper towels to drain and keep warm.

    Skillet method

    Heat a large skillet over medium heat. Lay bacon in a single layer and cook 3–5 minutes per side, adjusting heat so it renders fat without burning. Transfer to paper towels to drain. Reserve bacon fat in pan for toasting bread or frying tomatoes if desired.

Buttery Toast

    If using the oven bacon method, you can place bread on the baking sheet for the last 4–6 minutes to toast. Or heat a nonstick skillet over medium heat, spread butter on one side of each slice, and toast butter-side down 2–3 minutes until golden. Flip and toast briefly if you like both sides browned. Keep warm in a low oven (about 200°F/95°C).

Pan-Fried Tomatoes

    Slice tomatoes into 1/2-inch thick rounds. Heat olive oil in a skillet over medium-high heat. Add tomato slices in a single layer and sprinkle with salt and pepper. Cook 1.5–2 minutes per side until lightly caramelized but still holding shape. Remove and keep warm.

    Crack eggs into a mixing bowl. Add the milk, half of the salt, and half of the pepper. Whisk vigorously until mixture is uniform and slightly frothy — this aerates the eggs for a tender texture.

    Heat a nonstick skillet over medium-low heat and add the butter. Once melted and foaming but not browned, pour in the egg mixture. Let sit undisturbed for about 20–30 seconds until edges begin to set.

    Using a heatproof spatula, gently push the set edges toward the center, tilting the pan to let uncooked eggs flow to the edges. Continue gentle folding and stirring every 10–15 seconds. Cook until curds are soft and slightly runny — about 2–3 minutes total. Remove from heat just before fully set; residual heat will finish them. Season with remaining salt and pepper and fold in chopped chives if using.
